This Starbucks copycat white chocolate strawberry cream cold brew is my homemade version of their limited Valentine’s Day drink.
It starts with smooth, vanilla-sweetened cold brew and gets topped with a thick, fruity cold foam that tastes just like a white chocolate covered strawberry — sweet, creamy, and slightly berry-bright.
What I love most is how easy it is to make at home. No fancy equipment. No stovetop. No waiting for Valentine’s Day to roll around.
If you’ve ever wished you could make Starbucks cold brew drinks whenever you want, this one’s a must-try.
I’ve been recreating Starbucks drinks at home for years, and this one was especially fun to crack. I even shared the very first Starbucks copycat vanilla sweet cream cold foam recipe back when my daughter was a barista and helped me figure out the proportions. This strawberry cream cold brew felt like the perfect next step.

Ingredients Notes and Substitutions
Cold brew coffee
You can use homemade cold brew or store-bought. I used Starbucks unsweetened cold brew from the refrigerated section. If you buy a concentrated version, you’ll have extra for other drinks like this easy coffee milkshake.
Vanilla syrup
I use Starbucks vanilla syrup, but any vanilla coffee syrup works. You can also make this homemade vanilla syrup.
White chocolate sauce
Look in the ice cream toppings aisle. Ghirardelli and Torani both work great and blend easily into the cream.
Strawberry puree
Store-bought puree is fine, but homemade really shines here. It’s just strawberries, sugar, and lemon blended together. No cooking and huge strawberry flavor. Here’s how I make strawberry puree sauce. (It’s included in the recipe card below, too.)
Heavy cream
Use the same heavy cream you’d use for whipped cream. It gives the cold foam its rich texture.
Chocolate chips
Starbucks garnishes this drink with chocolate curls. You can use mini chocolate chips or grate a little bit of a chocolate candy bar into shavings.

How to Make White Chocolate Strawberry Cream Cold Brew
Step 1: Make the Strawberry Puree (Optional)
Combine thawed frozen strawberries and sugar in a blender cup. Let it sit for about 5 minutes to draw out the juices. Add lemon juice and zest, then blend until completely smooth.
My Strawberry Frappuccino recipe is another great way to use homemade strawberry puree in a classic blended Starbucks drink.
Step 2: Make the White Chocolate Strawberry Cold Foam
In a cold cup that’s been in the freezer for about 15 minutes, combine the heavy cream, white chocolate sauce, and strawberry puree. Froth with a handheld milk frother for 15 to 30 seconds until thick and creamy.
Step 3: Assemble the Drink
Add vanilla syrup to a 16-ounce glass. Pour in the cold brew and stir to combine. Add ice, leaving about an inch of space at the top. Slowly pour the cold foam over the drink and garnish with chocolate chips.
Step 4: Garnish and Serve
Top with a sliced strawberry or a few diced strawberries if you want to make it extra fun.
Cold Foam Tips for the Best Texture
Cold foam works best when everything is cold. That means cold cream, cold chocolate sauce, cold fruit puree, and even a cold cup.
If your foam is not thickening, pop it into the freezer for about 5 minutes and froth again. It should end up thick enough to sit on top of the drink but loose enough to slowly cascade into the coffee.
Unlike many cold foam recipes, this one skips the milk. The white chocolate sauce provides just enough thinning while keeping the foam rich and creamy.
Recipe Notes
- Always combine liquids before adding ice, just like Starbucks does, so you leave enough space for the cold foam.
- This recipe makes enough strawberry puree for several drinks, or use it to make drinks like this Starbucks Iced Double Berry Matcha.
- Store leftover puree in the fridge for up to 5 days.
- You can swap strawberry for raspberry puree for a fun variation, or dark chocolate for white chocolate sauce.
