Pumpkin syrup – Use Torani Pumpkin Pie Syrup or make my homemade pumpkin spice syrup. It only takes minutes to make and you’ll have enough to make lots of lattes.
Espresso – Strong coffee flavor is best; I like Starbucks dark roast beans or Nespresso dark roast espresso capsules.
Milk – Whole or 2% froths up creamy and smooth; use a steam wand, frother (like this Breville milk frother), or whisked warm milk.
Whipped cream – Homemade or store-bought works; try Starbucks-style whipped cream for café flavor.
Pie crust crumble – Classic pie crust ingredients are baked into buttery crumbles; no rolling pin needed. Trust me, these are easy to make and a must for the full pumpkin pie latte experience.
How to Make a Pumpkin Pie Latte
You can make the pie crust crumbles in advance and keep in the refrigerator. Then all you have to do is assemble the latte when ready to enjoy!

- Mix flour, brown sugar, cinnamon, and salt.
- Cut in cold butter until crumbly.
- Spread on a baking sheet and bake at 350°F for 8–10 minutes.
- Cool, then break into small crumbles.
Assemble the Latte
- Add pumpkin syrup to a mug.
- Pour in brewed espresso.
- Steam milk and pour over the espresso.
- Top with whipped cream.
- Sprinkle pie crust crumbles and pumpkin spice on top.

A homemade pumpkin pie latte is similar to the famous Starbucks Pumpkin Spice Latte, but with a couple key differences.
At Starbucks, pumpkin drinks get their flavor from a milk-based pumpkin spice sauce, while my version uses a pumpkin spice simple syrup.
The syrup blends smoothly with espresso and milk for plenty of pumpkin flavor without being too heavy.
And while Starbucks tops their PSL with whipped cream and a dusting of pumpkin pie spice, this latte goes a step further. The buttery pie crust crumble topping makes it taste like real pumpkin pie in drink form — crust and all.
To me, that’s what makes it extra special and a fun upgrade to the classic PSL.

Ingredients
For the Pumpkin Pie Latte
- 3 tablespoons pumpkin syrup
- 2 ounces brewed espresso
- 1 cup milk, steamed
- whipped cream, topping
- pie crust crumbles, topping
- pumpkin pie spice (optional topping)
- caramel sauce (optional topping)
For the Pie Crust Latte Topping
- 1/4 cup flour
- 2 tablespoons brown sugar
- 1/4 teaspoon ground cinnamon
- pinch of salt
- 2 tablespoons butter, cold
Instructions
Make the Pie Crust Latte Topping
- Preheat oven to 350 degrees.
- Combine flour, brown sugar, cinnamon and salt in a small bowl. Cut in cold butter with a pastry cutter until mixture resembles course flakes.
- Spread pie crust crumb mixture evenly on a baking sheet lined with parchment paper. Bake for 9-10 minutes, until light golden brown. Set aside to cool.
Make the Pumpkin Pie Latte
- Add pumpkin syrup to a mug. Pour brewed espresso over the syrup and stir.
- Steam milk then pour the milk and foam into the espresso.
- Top the pumpkin latte with whipped cream and homemade pie crust crumbles. Drizzle with caramel sauce (optional) and sprinkle with ground pumpkin pie spice (optional).
Notes
You can make the pie crust crumble topping ahead of time so the latte is quick to assemble. It makes enough topping for many lattes. Store in the refrigerator for 5-7 days.
